Autumn Harvest Bisque

Ingredients
• 1 large butternut squash about 4 cups chopped
• 1 large sweet potato about 2 cups chopped
• 1 large onion
• 2 leeks
• 3 cloves garlic minced
• 2 tablespoon olive oil
• 2 L vegetable broth plus extra as needed
• 1 ½ cups apple cider or juice
• 6-8 sprigs fresh thyme
• 1 cinnamon stick
• 1 teaspoon kosher salt plus extra
• ¼ teaspoon pepper
• 15 oz pumpkin purée
• ground cinnamon for garnish
• heavy cream for garnish
Instructions
• Peel and chop the butternut squash, discarding the pulp and seeds. Peel and chop the sweet potato. Peel and dice the onion. Remove the dark green leaves from the leeks. Slice the leeks in half lengthwise and rinse well between the layers. Finely chop the leeks. Tie the thyme sprigs together in a bundle and set aside.

• In a large, heavy bottomed pot, heat the olive oil over medium heat. Add the onions and leeks and sprinkle with a little kosher salt. Sauté for 4 to 5 minutes until the onions have softened. Add the minced garlic and sauté for another minute until fragrant.

• Add the vegetable broth and apple cider to the pot along with the butternut squash and sweet potato, thyme bundle, cinnamon stick, 1 teaspoon kosher salt, and the pepper.

• Bring the soup to a boil and then reduce the heat to medium low. Partially cover the pot with a lid and simmer for 30 minutes until the vegetables are very tender. Stir in the pumpkin purée and cook for another 5 to 10 minutes. Remove the thyme bundle and cinnamon stick.

• Use a blender or immersion blender to purée the soup until smooth. If using a blender, carefully transfer the soup in two or three batches and blend until very smooth. Transfer the puréed soup back into the bot then taste and check the seasoning. If you prefer the soup a little thinner, you can add a bit more vegetable broth or apple juice.

• To serve, garnish with a sprinkle of cinnamon and a swirl of heavy cream and enjoy!

Maple Roasted Nuts

Ingredients
• 4 cups mixed whole nuts *see note
• 3 tablespoon butter
• 3 tablespoon maple syrup **see note
• 2 tablespoon brown sugar
• 2 tablespoon chopped fresh rosemary
• 1 ½ teaspoon smoked salt plus extra
Instructions
• Preheat the oven to 325°F. Line a baking sheet with parchment paper and set aside. Combine the nuts in a mixing bowl and set aside. Combine the butter and maple syrup in a small saucepan and place over medium heat, whisking together as the butter melts. In a small bowl, combine the brown sugar, chopped fresh rosemary, and the smoked sea salt.

• Once the butter mixture begins to bubble, remove from the heat and pour over the nuts. Stir the nuts so they are well coated with the butter mixture. Sprinkle the brown sugar mixture over the nuts and stir to combine. Spread the nuts out on the prepared baking sheet.

• Bake the nuts while stirring occasionally. Every 5 minutes, take the nuts out and stir them on the sheet pan. Continue roasting for a total of 17 to 20 minutes or until the nuts are well browned. When done, you can sprinkle with a little more of the smoked salt if you prefer.

• Let the nuts cool completely, breaking up any large chunks as they cool. The nuts will harden as they cool. Enjoy!

Notes
*I used a blend of walnuts, pecans, cashews, almonds, and hazelnuts

**You can substitute with an equal amount of honey.

Vintage Millionaire Pie

Graham Cracker Crust
About 1½ cups crushed graham crackers, or enough to cover the bottom and sides of a 9-inch pie plate
1/4 cup sugar
2/3 cup melted margarine or salted butter
Filling
4 oz. cream cheese, room temperature
1/2 of a 14-oz. can sweetened condensed milk
18-oz. can crushed pineapple, drained well
1/3 cup chopped pecans
1/3 cup chopped maraschino cherries
8 oz. Cool Whip, divided
1/2 cup toasted flaked coconut
Juice of 1/2 large lemon

Directions
Combine the crushed graham crackers, sugar and melted margarine or butter. Mix well. Press into the bottom and up the sides of a 9-inch pie plate. Bake at 350°F for 10 minutes.
Cool completely before filling.
In a large bowl, beat the cream cheese and sweetened condensed milk together until smooth and creamy.
Fold in the crushed pineapple, drained well, chopped pecans, chopped maraschino cherries and lemon juice.
Gently fold in half of the Cool Whip until well combined.
Spoon the mixture into the cooled graham cracker crust and spread evenly.
Top with the remaining Cool Whip and sprinkle with toasted coconut.
Refrigerate for at least 4 hours before serving.

Shortcut: Don't want to make the crust? Use a premade 9-inch graham cracker crust. I also like adding a few fresh strawberries and banana slices on top. It makes the pie look so much prettier!

Orange Roll Breakfast Cake

Ingredients
• 3 cups Flour
• 3/4 cup Sugar
• 4 teaspoon Baking Powder
• 1/2 teaspoon Salt
• 1 1/2 cups Buttermilk
• 2 Eggs
• 2 teaspoons Vanilla
• 1/2 cup Butter melted
Topping:
• 1 cup Butter softened
• 1 cup Sugar
• 2 Tablespoons Flour
• 1 Tablespoon Fresh Orange Juice
• 1 Tablespoon Orange Zest
Orange Cream Glaze:
• 4 ounces Cream Cheese softened
• 2 cups Powdered Sugar
• 1/3 cup Fresh Orange Juice
• 2 teaspoons Orange Zest

Instructions
• Preheat oven to 350 degrees.
• In a large bowl, mix together flour, sugar, baking powder, and salt. Add buttermilk, eggs, and vanilla and stir. Slowly pour in melted butter and fold into batter.
• Pour into greased 9 x 13 baking pan.
• In a medium bowl, stir together butter, sugar, flour, orange juice and orange zest. Drop evenly over batter and swirl with a knife to incorporate into the batter. This is an important step as you want to swirl it into the cake from the bottom to the top.

• Bake for 30-36 minutes.
• In mixing bowl, beat cream cheese for 1 minute until creamy. Add powdered sugar, orange juice, and orange zest. Pour over warm cake. If you would like some of the glaze to seep into the cake, poke holes and let the glaze fill the cake.
• Garnish with Fresh Orange Zest (optional)
