Which sentence would you use in IELTS Writing Task 2?

Students should study subjects in which they are interested.

Both sentences are grammatically correct. The first sentence which ends with a preposition is less formal. We'd definitely prefer it in IELTS Speaking. In IELTS Writing Task 2, it's better to use more formal writing style, so sentence 2 is the perfect choice (sentence 1 is still acceptable). You should, however, avoid sentence 2 in IELTS Speaking as it's too formal for spoken English.
