Let's start with some popular versions:

1️⃣ Mother's day = This is correct. I'm celebrating the day of my mother (not mothers).
Compare it to the department of "ladies' shoes" = a lot of shoes for a lot of ladies

2️⃣ A series = again, this is correct. A series is a set of programmes: a TV series. I know, that "s" is misleading.
