🔥 Gas vs. Electric Kitchens: A Health Hazard Study
A study of 27 commercial kitchens found that gas-fired appliances significantly increase air pollution and heat exposure for workers. Gas kitchens exceeded health guidelines for nitrogen dioxide (NO2) in 70% of cases, with some reaching over 1000 ppbv. Carbon monoxide and benzene also surpassed limits in several gas kitchens.
🌡️ Extreme Heat in Gas Kitchens
Over 68% of gas kitchens exceeded OSHA's proposed high-heat trigger of 90°F, with 10 recording temperatures over 100°F. These high temperatures were primarily driven by internal heat sources, not outdoor conditions.
🌙 Overnight Pollution Risks
Interestingly, two-thirds of fossil-fueled kitchens showed higher pollutant levels overnight when ventilation was off but pilot lights remained lit, impacting cleaning and prep crews.
⚡ Electric Kitchens Show No Exceedances
In stark contrast, the three fully electric kitchens studied showed no exceedances of pollutant or temperature thresholds, highlighting fuel type as a key factor in kitchen air quality.
